Amazing Oreo Cheesecake

If you've been following my blog for a while now, you'll know that me and my lovely friend Emily have started a little cake making business where we work! And if you follow me on Instagram, you'll have seen some of my delicious creations that have gone down a treat!

The one that has sparked the most interest so far (and completely sold out over the weekend, might I add...woo!), was my yummy Oreo Cheesecake, and today I'd like to share my recipe with you all...
It's not super unhealthy either, so is the perfect sweet indulgence for those of you who don't like too much junk food! 


You will need...

- a packet of dark chocolate digestive biscuits (around 250g)
- 100g unsalted butter (melted)
- 360g of soft cream cheese...I use Tesco's Quark cheese which is fat free!
- 300ml double cream
- 1 teaspoon of vanilla extract
- 80g of caster sugar
- 180g white chocolate (melted)
- a packet of original Oreos (around 150g)


Here's what to do...

- Firstly, find yourself a round cake tin between 20-25cm and line it with greaseproof paper.

- Next, crumble the hell out of your packet of digestive biscuits. I like to de-stress myself by using the traditional plastic bag and rolling pin method so whack away until your biscuits resemble fine breadcrumbs but feel free to use a food processor if you want!

- You'll need your melted butter next, and combine it well in a bowl with the digestives until it turns brown and chocolatey.

- Press this mixture into your cake tin base, so it is evenly covered, and press it slightly up the sides - it will add to the yummy-ness! Cover it with clingfilm and pop into the fridge for 20 minutes to allow it to set.

- Next up, beat your cream cheese, double cream, caster sugar and vanilla extract together - you can do this by hand or in a food processor, it's up to you! Once this is done, you'll need to melt your white chocolate and then add this to the mixture, combining it well. 

- Take a few Oreos and crumble them up into the mixture, and again combine these well (the Oreos will go soft when in the fridge which makes the cake taste so yummy!)

- Pour all of your mixture into your cake tin after the base has set, and then it's time to decorate! This bit is entirely up to you but I like to cut Oreos in half and stick these around the edge of the cheesecake, which also helps with servings size. Any leftover ones, I crumble finely and sprinkle in the middle which I think makes the cake look yummy!

- When you've decorated to your hearts content, pop your finished cheesecake into the fridge to set, with a layer of cling film covering the top to keep it clean. I recommend leaving it to set overnight to ensure the cream cheese filling is the right consistency!

Serves between 8-12 depending on how big you like your slices!


And voilá! A not so unhealthy, but yummy chocolate indulgence that makes for a perfect after dinner dessert! Best enjoyed chilled with a bit of chocolate sauce over the top and cup of tea :)

  4. This looks delish! I've been wanting to try my hand at cheesecake for aaaages but it's always the one dessert that has intimidated me. I always saw recipes using the water bath to bake it so I love that this one doesn't require that! I'll let you know when I try it :) xx
